Inspiration from the <a href="http://digestivehealthinstitute.org/">Digestive Health Institute</a></h3>

Credit goes to Norm Robillard of the Digestive Health Institute who's <a href="http://digestivehealthinstitute.org/gut-friendly-recipes/">gut friendly original version of this recipe</a> inspired mine.<br />
<br />
Using the above Caesar recipe as a template I switched it up to increase the fat content and to my personal taste.<br />
<br />
Use the same technique you use to make <a href="http://primalnorthrecipes.blogspot.ca/2012/12/new-primal-north-mayonnaise-recipe.html">blender mayo</a>.<br />
<br />
<h3>
The fats</h3>
<div>
Melt in a pan until warm and liquid, but NOT hot</div>
<div>
<ul>
<li>one half cup light olive oil and one half cup of extra virgin olive oil OR one cup of normal olive oil</li>
<li>1/4 cup of butter</li>
</ul>
<div>
Once the butter is melted you can begin the Caesar dressing. Do not let the oil get hot.</div>

The base</h3>

In a blender place the following</div>
<div>
<ul>
<li>2 chopped garlic cloves or puree of like amount</li>
<li>1 egg yolk (raw)</li>
<li>1 whole egg (raw)</li>
<li>1 TSP balsamic vinegar</li>
<li>Juice of 1/2 a lemon</li>
<li>1 TSP of apple cider vinegar (or more balsamic)</li>
<li>4 small anchovy fillets (anchovy paste sucks use the real thing)</li>
</ul>

Steps</h3>

<ol>
<li>Blend the above mixture on a good speed until super mixed and a little fluffy</li>
<li>Very very very slowly drizzle in warm oil and butter, cranking up blender speed as needed</li>
<li>Now and then stop the blender, and mix with a spoon to let out any air bubble around the blade</li>
<li>Incorporate fully all oil until a smooth dressing results</li>

Shred 3/4 cup of real Parmesan cheese and add to blender while spinning<br />

One of the hardest parts about travelling every week is the combo of carb creep and fat absence.<br />

Its pretty fricking hard to get 80% of cals from fat on the road. You gotta ask the waitress for like 10 patties of butter and you may just get margarine.<br />
<br />
Getting lean meat is easy though! So rather than packing both, I thought why not just bring a busload of fat!<br />
<br />
Taking my queue from the Inuit hunter who used to pack almost all blubber for his trips that could last weeks or months.<br />
<br />
I want something fatty, saturated, healthy, portable, and why can it not taste palatable too if I have to eat it in quantity?<br />
<br />
Enter CHOCOLATE BLUBBER BABY!<br />

Recipe</h3>
<b>Note: Due to the melting points of butter, and coconut oil, it is needed to keep this recipe cool in summer for travel. I always bring a cooler with me travelling with ice in the bottom.</b><br />
<ul>
<li>Melt together</li>
<li>1 pound butter, ideally grass fed organic..</li>
<li>1/3 as much coconut oil</li>
<li>1 bar of 90% dark chocolate with very low carb ( Around here its Lindt at about 8 grams a bar)</li>
<li>Cool</li>
<li>Chop into big hunking chunks and add to coffee or just eat as needed for fat</li>

My LCHF creamy coleslaw makes an awesome side. Dressing is equal parts home made mayo and sour cream (about 1/3 cup each), 2 TB Braggs Apple Cider Vinegre, 1 TSP mustard, salt, pepper, 1 TBSP garlic puree, 1 TBSP sweetener if your way of eating allows but its not needed and I didn't use it (Keto baby!) - Mix with cut up cabbage and a third as much raddichio </td></tr>

Fried Chicken Hearts with Creamy Herb Sauce</h3>

<li>One pound chicken hearts</li>
<li>2 cups chicken or beef bone broth or regular broth (I had home made beef bone broth handy)</li>
<li>Half a green pepper, chopped small</li>
<li>3 shallots, chopped small</li>
<li>3 TB quality butter, pastured organic if possible</li>
<li>1/2 cup of 35% cream, pastured organic if possible</li>
<li>1/4 cup of cream cheese of similar quality</li>
<li>Favorate spice mix (I use a roasted garlic and pepper spice mix I love)</li>
</ul>

Directions</h4>

<li>Non-Stick pan on medium heat, get broth boiling</li>
<li>Add pound of chicken hearts</li>
<li>Add 2 TBSP of your spice mix</li>
<li>Cover, simmer 10 minutes</li>
<li>Drain, return hearts to pan</li>
<li>Add butter</li>
<li>Add chopped shallots and green peppers, can also add red peppers or other low carb stir fry style veg as you wish</li>
<li>Fry over medium heat, brown up hearts, veg should go translucent</li>
<li>Add cream</li>
<li>Add cream cheese</li>
<li>Add 2 TBSP spice mix</li>
<li>Stir and reduce until thick</li>
<li>Taste and spice as needed</li>
</ol>
